She is grinding dried clay w/ potsherd temper–When Margarita Castro taught this she called the powder “masa”–corn meal–The wet clay was mashed into a flat shape–she called this a “tortilla”–coils were built up around the resulting base–she called this “chorrizo”–sausage–the coils were paddled against a little clay anvil–she called this an “hongo”–a mushroom
